- Here's a terrific jicama salad recipe from Chef Emeril Lagasse, of
- Emeril's and NOLA Restaurants in New Orleans:

- JICAMA-ORANGE SALAD

- 2 cups jicama, half-inch dice
- 3 oranges, peeled, seeded and sectioned
- 1/4 cup red onion, finely chopped
- 3 tablespoons red bell pepper, finely chopped
- 2 tablespoons orange juice
- 4 tablespoons cilantro, chopped
- 4 turns fresh ground black pepper
- Salt to taste

- Combine all ingredients and toss well. It's a little better if
- refrigerated for an hour or so before serving.
